Makes 10 nos
Ingredients
½ cup oats
½ cup crumbled walnuts
15 deseeded Medjool dates
¼ cup chocolate protein powder
¼ cup unsweetened cocoa powder
¼ cup natural peanut butter or sugar-free chocolate spread
1 tablespoon water
To soften dates, place them in a bowl that can go in the microwave for 30 seconds. (This step can be omitted if dates are already soft.)
In a large food processor, combine all the ingredients and process them on high until a moist, sticky crumb is produced. Remove the food processor’s blade with care. Make 10 uniformly sized balls out of the mixture.
Place in an airtight jar and refrigerate for up to a week or freeze for up to three months.
(TIP: You can garnish these protein-filled balls with desiccated coconut or even with toasted almond flakes.)
