Roti or Pizza? Put those two together

Stuck with leftover rotis and naan from lunch? Don’t discard them yet, we’ve got a perfect recipe to give them a delightful makeover which would make for an ideal weekend dinner.

The best part of this recipe is that it’s healthy as well as saves food from being wasted. Speaking of pizzas, we say the Italians are right to say prendere due piccioni con una fava (means catch two pigeons with one lava bean).

Roti pizza

Preparation time: 20 mins

For topping

4 tsp pizza sauce

small cubes onion

few sliced capsicums

few sliced olives

3 slice tomato

few jalapenos (chopped)

1 cup mozzarella cheese (grated)

¼ tsp chilli flakes

¼ tsp mixed herbs

1 tsp oil

For pizza
Leftover rotis or naans (any flatbread you prefer)

On a hot griddle, place the leftover roti or naan. Spread the pizza sauce uniformly on the base and top it with onion, capsicum, olives, tomato and jalapenos. Add some mozzarella cheese as per your liking. Sprinkle seasonings like chilli flakes, oregano or mixed herbs.

Cover and cook on low flame for eight minutes or until the cheese melts completely. Serve the scrumptious pizza with a refreshing fruity beverage.
