Lo and behold, when we got into research mode, we stumbled across pomegranate molasses. It has a zesty, vibrant flavour and is simple to prepare at home. It can be used for roasts, sauces, and dressings. Even desserts can be drizzled with it!

Pomegranate molasses is a frequently-used ingredient in North African and Middle Eastern cuisines. It is often central to savoury meals, which gives them a touch of sweetness and tang.

Homemade Pomegranate Molasses

Preparation time: 60 mins

16 servings (1 Cup) 

Ingredients

8 large pomegranates

1/2 cup sugar

2 tablespoons lemon juice

In order to create pomegranate juice, add the arils to a blender and pulse just long enough to break up the arils. Avoid over-pulsing to avoid mixing the delicious crimson bits with the bitter white hard parts. Then pass it through a sieve with a fine mesh.

Pomegranate juice, sugar, and lemon juice are heated together in a sizeable, wide, uncovered saucepan on medium-high heat until the sugar has completely dissolved and the juice is simmering. just enough to keep the temperature at a simmer.

Simmer for approximately an hour, or until the juice is reduced to 1 to 1 1/4 cups and has a syrupy consistency. While the pomegranate molasses is heating, you can add additional sugar to taste if you want it to be sweeter.

Pour the molasses into a glass jar. Let it cool down and store it in the fridge.

(TIP: You can also mix this molasses with a little orange juice and club soda for a refreshing punch.)
