Muscat – The Washington Post’s curator of the year’s best cookbooks has praised Dina Macki’s ‘Bahari’ as the first English-language cookbook on Omani cuisine written by an Omani chef.
Following the recognition, the U.S. Embassy in Muscat also shared a congratulatory post on social media: “Congratulations to Dina Macki on her cookbook BAHARI being named one of the 14 best cookbooks worldwide by The Washington Post! As the first English-language cookbook on Omani cuisine by an Omani chef, Dina takes us on a flavorful journey through Oman and Zanzibar, sharing deeply personal recipes and stories. We’re delighted to see Omani culture celebrated on the global stage—truly a feast for the senses!”
Born in the UK to Omani-Zanzibari parents, Macki draws inspiration from her heritage to showcase Oman’s culinary depth. ‘Bahari’, meaning ‘ocean’ in Swahili, reflects the country’s maritime history and its role as a crossroads of culinary influences.
Through extensive travel in Oman and Zanzibar, Macki meticulously researched recipes. Dishes like her aunt’s spiced prawn dumplings, Qabooli rice, and sambusas share space with Zanzibari-inspired Chuku Chuku curry, featuring dried lime, coconut, and aromatic spices – all key elements of Omani cuisine. The book offers over 90 recipes, introducing the world to a vibrant tradition.
‘Bahari’ goes beyond simply providing instructions. Vibrant photography and insightful essays delve into the history and culture behind the dishes, offering a cultural exploration for readers. It’s a window into the flavours and stories that define Omani and Zanzibari cooking.
The Washington Post lauded the book’s ability to transport readers through its pages, calling it a ‘gorgeously photographed’ pick of the year. The cookbook has also won the Jane Grigson Trust Award and was featured by the Evening Standard as one of the best cookbooks of 2024.
Macki has been a tireless advocate for Omani cuisine on the global stage and her book solidifies her position as a culinary ambassador, bringing the unique flavours and stories of Oman to a wider audience.
