Round and fuzzy, apricots look like a smaller version of a peach but share the tartness of purple plums. They’re packed with nutrients and have many health benefits, such as enhanced digestion and eye health. Psst.. Apricots are also low in calories and fat while also an excellent source of vitamins A and C.


Apricot Drink-Qamar al din

Preparation time: 15 mins

Serves four

Ingredients:

½ cup dried apricots

½ teaspoon rose water (orange blossom water can also be used)

½ teaspoon orange zest (or as per taste)

3 cups of water

Mint sprig 

To begin with, in a bowl, cover the apricots with 1 cup of hot water and let sit for at least 1 hour. Soaking these dried apricots overnight would be preferable. 

Now, place the soaked apricots in a blender. To it, add rose water, some orange zest, and add 3 cups of cold water and blend until smooth. All you have to do now is garnish with the mint and enjoy the delicious seasonal drink this summer!
